Brown Sugar Peach Cobbler with Almond Biscuits…dessert for breakfast!

So school starts tomorrow and 2 of my kids are off to university again.  For as much as I love getting back to routine, I hate when my kids leave…it makes me very sad.  And, when I’m sad, dessert always seems to make me feel better.  And, if I’m sad, I’m sure my kids are sad (probably because they love their mother so much…I’m sure it has nothing to do with living in a house where everything is done for them for the summer!).  So, like a good mother, I made dessert for breakfast (along with farm eggs, a plate of tomatoes from the garden and bacon from the local butcher!) :):):)
Now, everyone should be happy, no??

Ingredients:
6 cups diced peaches (I even left the skin on!)
1/2 cup brown sugar
2 tbsp cornstarch
pinch cinnamon
pinch of salt

Topping:
1 cup all-purpose flour
1/4 cup almond meal
6 tablespoons sugar
1 teaspoon baking powder
pinch of salt
1/3 cup cold butter, cut into pieces
1 large egg, beaten
4 tablespoons milk
coarse sugar for decoration (optional)

Everything ready to begin

1.  Preheat oven to 375.  Combine brown sugar with cinnamon and cornstarch.

2.  Dump the brown sugar mixture into the peach bowl and stir; dump into a baking dish (something like a 9×13 dish but a bit smaller)

3.  In the bowl with the flour, dump in the baking powder, almond meal, salt and sugar; stir.  Cut in the butter until it is incorporated…

4.  Add the beaten egg to the milk and mix; dump into flour mixture and gently toss (don’t overmix or the biscuits will be tough)

5.  Dump by tablespoon onto peach topping and sprinkle with coarse sugar if using (it will make the biscuits crunchy but it’s okay to omit it too) and bake for about 30-40 minutes

So yummy!  It’s kind of a “dump and bake” recipe (as you can see from the instructions above)…just make sure you eat it warm…it’s extra special that way.  And it makes kids going back to university really, really, smart (not really, but it makes me feel better that their bellies are full of peach cobbler!)
