This salad is a winner in my eyes…fast, healthy, totally yummy, colourful…
Grab some beets from your local farmers market and whip some up…your tummy will thank you later!
I basket of baby beets (you can use regular beets but the baby beets are sweeter!), around 4-6 cups but the amount doesn’t really matter.
1/2 red onion
2 oranges, sectioned like this
2 tbsp olive oil
2 tbsp balsamic vinegar
salt and pepper to taste
1/4 c crumbled goat cheese
1/4 c sunflower seeds
1. Put the beets in a large pot of boiling water and cook until fork tender (don’t over-cook them). Replace the boiling water with cold water and set aside until they are cool enough to handle.
2. Peel them and then, using a mandolin (or you can use a food processor with a shredder or a really sharp knife), cut the beets into matchstick pieces (or the biggest grate on a food processor); set aside.
3. Do the onions the same way (they should turn out looking minced like this), or you can mince them with a knife.

4. In a large bowl combine beets, onions, oil and vinegar; mix well and season to taste. Scatter top of salad with orange sections, goat cheese and seeds.
How colourful is that?? They say to eat the colours of the rainbow to stay healthy. I’ve never seen a rainbow this bright but if you make this, you will make a nutritionist somewhere on this planet very happy!!
