Easy Stuffed Apples

Alright, so, this is not really a recipe.

It’s more like a “grab some apples from the fridge, a few things from the pantry and make something yummy” dish.

It’s fast, easy and you probably have most of this stuff at home already.  That’s a good place to start, no?

Anyone can do this and it’s a relatively healthy dessert (I’ve even had them for breakfast!).  Apples are a powerhouse of goodness – recent studies have shown apples help with teeth whitening, help to avoid Alzheimer’s, protect against Parkinson’s, curbs all sorts of cancers, decreases your risk of diabetes, reduces cholesterol, promotes heart health, can prevent gallstones,  helps with diarrhea and constipation, neutralizes IBS, averts hemorrhoids, helps control your weight, can detoxify your liver, boosts your immune system and can help with the prevention of cataracts…WOW!!!

Grab yourself some apples and stuff to your hearts content.  You know what they say, “an apple a day…”

 

Ingredients:

4-6 apples

Add-ins:

granola

dates

dried fruit

chocolate chips

caramel sauce

1.  Core your apple – just push your knife all the way through in an octagonal shape and push the middle through and out the bottom.

2.  If you like dates, take the pit out of one and shove it into the bottom so your filling doesn’t escape (don’t worry,,,I don’t love dried fruit but dates melt into a sugary goodness!!)

If you hate dates, just cut off the bottom end of the core and stick it back in…

…like this, so the bottom is sealed.  Just remember not to eat it when it’s cooked!

3.  Now, take your filling of choice and stuff the cavity.  I used granola here (or you can crumble up a granola bar and use that).

Or you can fill the whole cavity with dates…

Or you can use some leftover Halloween chocolate (do you know that one mini chocolate bar fits perfectly?  I mean, it fits EXACTLY into the middle…I think someone was hired to figure that out!)…just shove it in!

5.  Bake for about 15-20 minutes at 350…depending on the type of apple,the skin will stay in tact and the middle will be nice and soft (some apples may hold their shape better than others).

6.  If it’s for dessert, you can top it with ice cream (sooo good…apple pie without the guilt!!)

…if it’s for breakfast, crumble some granola around it and eat away!

A nice healthy snack…ready lickety split and, with all that fibre, it will keep you full and help you say no to some of those holiday goodies that will be coming your way soon!

On, the other hand, life is short.  Have both.
