No Knead Olive Buns

I know it’s summer and baking bread is the last thing on your mind but you really have to try this – honestly, it’s a game changer in the bread baking world!

You won’t really have the oven on for that long, I promise (20 minutes!) aaand you won’t have to spend all day kneading bread…trust me!

I want you to start thinking about it tonight, before you go to bed (I swear, you just have to think about it for 5 minutes – while you’re putting your dinner dishes in the dishwasher), because all the work happens while you’re asleep.

I like big buns and I cannot lie…

Sorry, I had to.

 

Ingredients:

One recipe for my No Knead Olive Bread

2 tablespoons olive oil (or cooking spray – but the olive oil is waaay better!)

2-3 tablespoons grated parmigiano

Click this link for my overnight No Knead Olive Bread and throw all the ingredients together in a bowl (the original recipe has sun-dried tomatoes, but I didn’t have any so I left them out…you can even leave out the olives and make it plain).

Throw a clean kitchen towel over it (or cover it with some plastic wrap) and go to bed.

You heard me…go to bed.

Seriously.

Now it’s morning, and this is what you should see:

Beauty, right?  Nice, fluffy dough!  It’s gonna kill you but I want you to deflate it – trust me. Just scrape it out onto a floured counter top (make sure you clean it first!) and then divide it into 12 equalish (is that even a word?) balls.

Roll them and put them into a greased, round pan (I used a cast iron pan, but you can use a cake pan; if you want the entire outsides to be crisp, put them on a cookie sheet spaced apart).

Now, brush the tops gently with olive oil (or spray them lightly with cooking spray) and grate some Parmigiano on top (you don’t NEED to do this but it’s pretty awesome!).

Now, cover it oh so lightly with more plastic wrap and leave it for at least a couple of hours (I say, go to the beach or something and come back at 4 to get ready for dinner!).

Now, turn your oven on to 425 and let it heat up.  Pop these babies in for 20 minutes – that’s all!!  Pour yourself a glass of wine and start making dinner.

Heck, these buns are gonna be so epic that you don’t need dinner – just cut up some cheese and open another bottle!
