Here is a no nonsense icing, cake topping, muffin filler, cinnamon roll glaze, twinkie injector…whatever you want to call it, it is so versatile and easy.

Cream Cheese Icing

Serves: 2 -3 cups
  • 8 oz cream cheese
  • ¼ c butter
  • 1 tsp vanilla
  • 3 cups icing sugar
  1. Combine cream cheese and butter and beat until smooth.
  2. Add vanilla and stir.
  3. Add in the powdered sugar and mix slowly (so you don't get it all over you!) and continue mixing until you get a smooth icing.
  4. Use on your favourite cake or muffin or freeze (as directed above) for further use.

    Thanks for this recipe Suzie….I’ve already made a batch of the icing and its waiting ( rather smugly! ) in the freezer…… for the carrot cake…..
