I think I’m going to take a poll today.

Do y’all look at a recipe title on a blog (not just mine, but every blog you look at) and then go straight to the recipe? Or do you take the time to read through the blog post.

I usually read through blog posts, but maybe I’m weird.  In my own blog posts, I try to write something helpful…sometimes to tell you a story about the dish and sometimes to guide you through some of the steps.  Sometimes, I just give you tips to make the dish super special.

But, maybe I should be adding all of that into the recipe section.  I’m really not sure!

Am I overthinking this? Please tell me!

The reason I’m asking is because I’m not sure how “entertaining” people expect blog posts to be.  I’ve seen blog posts that go on and on about random things and then the author says, “okay, never mind…now, about these cookies…”.  That kinda throws me for a loop.  If you want to talk about the price of gas, just talk about the price of gas and call the blog post “About the Price of Gas”.  But if you talk about the price of gas when you are giving me your grandmothers famous chocolate chip cookie recipe, the price of gas better have something to do with the availability of chocolate chips or something.

But, again, maybe that’s me.

Sooo, if you want me to be more diverse in my blog posts, let me know.

Until I hear back from you, I will tell you this…

You NEED to make a tray of these brownies (I made them years ago on the blog and you can find the full recipe here)  so you can whip up some brownie parfaits all summer long.

(note to readers: I swear I didn’t just do what I said I hate.  I know I jumped from “what do you read in a blog post” to “hey, here’s some brownies”…or maybe I did. Ugh. Sorry, but there’s no going back on this one!)

I’m super serious.  This tray makes an obscene amount of brownies (bonus points for me when these come out of the oven!). They are moist and chewy and they’re good on the counter (well wrapped) for, like, 4-5 days.  Or you can freeze them and serve them later (shhhh, don’t tell anyone but they’re even good frozen!).

Or you can cut them into small squares and pop them in your mouth like little morsels of heaven.

Or you can make them into these beautiful parfaits!

Regardless of how you serve these parfaits, they really need to be in your summer barbecue repertoire.  Honestly, if you have trouble making friends, just put this recipe in your back pocket. See, you guys all just thought I was nice and that’s why I have so many friends.  The truth hurts sometimes…

Quick and Easy Brownie Parfaits

Want a foolproof way to having more friends this summer?  Make these on repeat at your summer barbecues and you will never have an empty seat at your table!
Prep Time 15 minutes
Course Dessert

Ingredients
  

  • 1/2 recipe "The" Best Brownies (linked in the blog post)
  • 8 scoops ice cream of your choice (I love cookies and cream!)
  • 2 cups sliced strawberries plus more for garnish
  • whipping creamed for garnish

Instructions
 

  • Bake brownies as directed and cool (or use your favorite brownie recipe...or, heck, you can even buy some brownies!)
  • Cut the brownies into 2-inch squares to make assembly easier.
  • In 8 small glasses (or if you want to make mini versions, you can use shot glasses) or small mason jars, place a couple of brownie cubes at the bottom. Next, place a scoop of ice cream on top, the scatter 1/4 cup of the strawberries on top of the ice cream. Place a few more cube of brownies on top and finish with a bit of whipping cream. Continue with the remaining glasses.
  • Serve with a fresh strawberry.
