Easy Lemon Cake
Ingredients
Cake:
- 1 box (18 oz) yellow or white cake mix
- 1 box (3 1/2 oz) lemon instant pudding mix if you can't find lemon pudding, you can sub in vanilla
- 4 large eggs
- 3/4 cup mild oil like canola or avocado
- 3/4 cup water could be subbed for any citrus juice
Glaze:
- 2 cups icing/powdered sugar
- 1/3 cup lemon juice
- 1 tbsp butter, melted
- 1 tbsp milk or water
Instructions
- In the bowl of a stand mixer, add the cake mix, pudding mix, oil, eggs and water/juice and mix until combined.
- Preheat oven to 350 degrees; prepare a 9 x 13 inch pan by spraying with cooking spray or lining with parchment paper
- Pour batter into prepared pan and smooth the top; place pan in oven and bake from 40-50 minutes or until top is golden and the centre of the cake is firm.
- While the cake is baking, in a medium bowl, mix together all the glaze ingredients and set aside.
- When the cake is done baking, remove from oven and poke holes all over the top with a fork; pour glaze over top while warm and allow the glaze to soak in.
- Let the cake cool and serve!
