Yup, you heard that right…cottage cheese pizza buns!! Easy, healthy and kid approved!! Let’s do this!

If you had told me 20 years ago that I’d be making pizza buns with cottage cheese instead of yeast, I would’ve smiled politely… and then gone back to kneading dough like it was an Olympic sport.

And yet—here we are.

These cottage cheese pizza buns are fluffy, savoury, protein-packed, and come together faster than you can answer “What’s for dinner?” without panicking. They’re one of those internet-style recipes that sounds questionable… until you make them and suddenly you’re emotionally attached.

No yeast.
No rising.
No mixer.
No drama.

They’re perfect for lunchboxes, quick dinners, snacks, or those afternoons when everyone is hungry and somehow you are responsible.

Why Cottage Cheese Works in Pizza Buns

Cottage cheese is the quiet overachiever of the fridge. It adds moisture, structure, and tenderness to baked goods—without oil, eggs, or yeast. Once baked, it melts right into the dough, creating soft, fluffy buns that feel far more indulgent than the ingredient list suggests.

This is the same logic I use across a lot of the protein-boosted comfort food recipes on justcrumbs.ca—smart swaps that don’t announce themselves. Nobody wants a lecture with their pizza bun.

And if I can sneak extra protein into a nostalgic, pizza-adjacent food? I absolutely will.

Ingredients for Cottage Cheese Pizza Buns

You only need a handful of pantry staples and a few things you’ll learn to always have in your fridge for high protein cooking (hellooooo eggs and cottage cheese!!) to make the dough:

  • cottage cheese
  • all-purpose flour (see below for substitutions)
  • eggs
  • baking powder
  • dried oregano
  • salt

That’s it for the base. From there, the toppings are completely customizable.

Pizza Bun Topping Ideas

  • Shredded mozzarella or pizza-blend cheese
  • Pepperoni, cooked sausage, or ham
  • Mushrooms, olives, bell peppers, onions
  • A spoonful of pizza sauce or marinara
  • Parmesan, chili flakes, or Italian seasoning

This recipe is also excellent for using up random fridge leftovers—the last slice of deli meat, the half pepper, the cheese ends you keep saving “for something.”

This is the something.

How to Make Cottage Cheese Pizza Buns

Step 1: Preheat the oven

Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.

Step 2: Mix the dough

In a medium bowl, stir together the cottage cheese, flour, eggs, baking powder, oregano, and salt. At first, it’ll look a little rough and lumpy—totally normal. Keep mixing until a soft, (slightly sticky but loose) mixture forms – not really a dough but more like a dense batter…don’t worry, it’s all good!!

If your cottage cheese is very wet, add 1–2 extra tablespoons of flour.

Step 3: Shape the buns

Divide the dough into 6–9 portions and scoop the mixture onto the baking sheet. Gently shape into round circles. These are casual pizza buns, not beauty-pageant rolls.

Step 4: Add toppings

Add sauce (if using), toppings, and finish with cheese.

Step 5: Bake

Bake for 20–25 minutes, or until puffed, lightly golden, and bubbly on top. Let cool slightly before serving—unless you enjoy mouth burns, which I do not recommend.

Cottage Cheese Pizza Bun Variations & Substitutions

One of the best things about this recipe is how forgiving it is.

Flour Substitutions

These were made with almond flour – but also egg whites instead of whole eggs – so they didn’t hold up as well

Cottage Cheese Options

  • Full-fat cottage cheese gives the softest texture
  • Low-fat works fine
  • Large curds can be mashed or briefly blended

Seasoning Swaps

  • Italian seasoning instead of oregano
  • Garlic powder or chili flakes for extra flavour

Extra Protein Ideas

  • Stir finely chopped ham or cooked sausage into the dough
  • Add grated parmesan to the batter

Cottage Cheese Pizza Buns FAQ

Do cottage cheese pizza buns taste like cottage cheese?
Not at all. Once baked, the cottage cheese disappears into the dough and just tastes like soft, savoury bread.

Can I make these in an air fryer?
Yes! Cook at 350°F for 10–12 minutes, checking early. Air fryers love to surprise us.

Why didn’t my pizza buns rise much?
Check that your baking powder is fresh and avoid overmixing the dough.

Can I make mini pizza buns?
Absolutely. Perfect for kids or snacks—just reduce baking time slightly.

Are cottage cheese pizza buns filling?
Very. The protein from the cottage cheese makes them more satisfying than typical quick breads.

Do you think whipped ricotta cheese would work as a topping? Maybe add midway through baking.

Sorry for the delay! I think whipped ricotta would be great but only after baking…I think it would be a fresh addition!!
