Spring is in the air indeed!
At least our Canadian spring is in the air. One day it’s sunny and balmy, the next day there are torrential thunder storms and the next day it’s snowing.
Welcome to Canada!
And when it’s spring in these parts, we always get the “spring cleaning” bug (especially when the weather is nice!). The other thing that happens at this time of year, at least at my house, is we get ready for Easter. There’s always lots of baking, meal planning, egg hiding and everything else that comes with this holiday weekend.
Easter Menu Ideas:
I know, I did a post showing you everything you need to know to make your Easter table shine! But, there were some things I missed, so here are a few more menu ideas (including treats) to help you out if you are entertaining this weekend!
Last year, I cyber-met a lovely lady named Suzanne from the Pretty Feed and we started talking about traditional Italian Easter recipes. She sent me her grandmother’s recipe for Pane Di Pasqua. If you’re looking for some cute (and super easy) treats for the kids in the family, whip up a batch of this Pretty Easter Bark …simply break it up, wrap it up with some pretty ribbon and give it away to all your guests!
Sometimes, you don’t even need a recipe. Whip up a cake of your choice (don’t have time? Make a boxed cake mix!), top it with frosting, crumble on some crushed Oreo cookies and top with strawberry “carrots”!
To make the carrots, just melt some orange chocolate melts, dip in the strawberry and then, once it’s hard, drizzle some more on top to make them look like carrots (you can even make them into individual cups!!). The recipe for these cute carrot pots is right here!
And since you have the orange melts on the go, put them in a piping bag and squiggle out carrot designs onto parchment (don’t forget the green tops!)…add them to the top of your cupcakes…
Or even a simple bundt cake!!
And want some cute bunny cupcakes? Make vanilla cupcakes with vanilla frosting, cover with coconut and then cut large marshmallows in half, dip in pink sprinkles and tuck them into the top. The cutest bunny cupcakes ever!
Have you ever played with marzipan? If you add orange food colouring, then you can shape them into carrots (run a knife across the carrot to make them look more real!!). The green top is green coloured marzipan pushed through a garlic press! Check out this blog post that explains all the deets!!

How about this awesome Easter pie?? It’s made with ricotta and it is deeelicious!!
Need a good main dish for a small group? These rosemary skewered lamb kabobs are so tender!!
And the best accompaniment to the skewers are these pretty potato roses! It’s a bit more work to make them into roses but the recipe also shows you the easier way to make them into stacks!
And, finally, if are just hanging out with your family and want a fresh fish appetizer, you really need to try this beet cured salmon …it’s takes minutes to prep (the fridge does all the work!) and everyone loves it. Check out the post to see how to serve it
