Ingredients
  

Cake:

  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter, at room temperature
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup sour cream/yogurt
  • 2 medium lemons, zested and juiced (should be about 1/4 cup juice)
  • 1 tsp lemon extract (optional)

Glaze:

  • 2 cups icing/powdered sugar
  • 1/4 cup lemon juice
  • 1/4 tsp lemon extract optional
  • 1 tbp milk

Instructions
 

  • Preheat your oven to 350 and spray a 9 x 13 inch pan (and line with parchment) – you can also use a well-sprayed bundt pan.
  • In a medium bowl, mix together flour, baking powder, baking soda and salt; set aside.
  • In the bowl of a stand mixer, cream butter until soft. Add sugar and continue beating until light and fluffy.
  • Add eggs, one at a time and keep mixing until well combined. Add lemon juice and zest to yogurt (and extract if using).
  • Starting with dry ingredients, add a spoon of dry to the butter mixture and then a spoonful of the yogurt mix; keep adding until everything is incorporated (try to begin and end with the dry ingredients).
  • Pour batter into the prepared pan, smooth the top and bake until golden (the top should be firm when touched…about 40-50 minutes).
  • While the cake is baking, make the glaze by mixing the icing sugar, lemon juice and extract until combined and smooth.
  • When cake is done, remove from the oven and poke holes with a fork. While still warm, pour glaze over top and allow to soak in.
  • Serve on its own ,with some berries or a scoop of lemon gelato.
