Nostalgic Orange Soaked Yogurt Cake (with a gluten free alternative)

  • 2 1⁄2 cups all purpose flour (or see note above for gluten free version)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1⁄2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 eggs
  • 1 cup sugar
  • 3⁄4 cup melted butter (you can also use melted coconut oil)
  • 2 teaspoons orange rind, grated
  • 1 teaspoon vanilla
  • 1 cup plain (or vanilla) yogurt
  • 1⁄2 cup orange juice (from the oranges you zest and add water to top up)
  • For the syrup
  • 1 cup sugar
  • 1⁄2 cup water
  • 1⁄2 cup orange juice
  • 1 cinnamon stick
  • 2 -3 pieces orange peel
  1. Preheat the oven to 350°F
  2. Line a 9x13 pan with parchment.
  3. Combine flour, baking soda, baking powder, salt and cinnamon in a large bowl; set aside
  4. Beat together the eggs and sugar until foamy. Add the melted butter, grated orange peel, and vanilla.
  5. Add yogurt, juice, and dry ingredients to the egg mixture and gently stir.
  6. Spread batter into the baking sheet and smooth top.
  7. Bake for 45 minutes, until the cake is golden and firm to the touch.
  8. Combine syrup ingredients in a small saucepan and bring to a boil; then lower heat and simmer for 5 minutes or until sugar is melted.
  9. Remove the cinnamon stick and orange peel.
  10. Poke holes into the top of the cake and pour ALL the syrup over it while the cake is still warm
  11. Cut and serve!
