I am going to make a bold statement…
Having a Starbucks addiction can seriously alter your financial standing.
If you go every day and get a coffee (let’s say a latte) and something sweet to go with it (like a slice of cake or a muffin), you will have to dish out $7-8.
Every. Single. Day.
If this is a workday habit, it will cost you $40 a week…$160 a month…and assuming you take a 2 week vacation (where there is no Starbucks around!), that is – wait for it….
$2000 a year.
And you haven’t even really had breakfast yet.
Really? I mean, you want to buy a pair of $2000 shoes? Knock yourself out. At least you have something to wear for a while.
Listen, I’m not suggesting you eliminate your only vice (see how nice I am?!), but if you’re watching your moolah, why not make a batch of this gingerbread loaf (honestly, my favourite Christmas treat at Starbucks!). You can make it, frost it (you can click here for my easy cream cheese icing!), slice it, wrap individual pieces in plastic wrap and freeze it.
Then, when you leave the house, grab a piece and, by the time you get to Starbucks to order your coffee, it will be soft and moist and taste like you just baked it that morning.
Now that we’ve got that out of the way, let’s talk about roasting your own coffee beans….
- 1/2 cup butter
- 1/2 c sugar
- 1 tsp vanilla
- 1 egg
- 1/4 cup vegetable oil
- 3/4 cup applesauce (you can omit oil and use 1 c applesauce)
- 1 1/2 c flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp cloves, ground
- 2 tsp ground ginger
- 1/2 tsp nutmeg
- 1/2 tsp salt
- Cream cheese icing (optional…you can find the recipe in the comments above)
- gingerbread quints (optional)
- Preheat oven to 350
- Prepare a 9X5 loaf pan by either spraying with cooking spray or lining the pan with parchment (I prefer parchment)
- Beat softened butter and sugar until creamy
- Add vanilla and egg; stir well
- Add applesauce (and oil if you’re using it); mix again.
- In a separate bowl, mix flour, baking soda and spices; add to egg mixture and stir again.
- Scrape into a loaf pan and bake for 1 hour (or until the middle is firm)
- Remove from oven and pull loaf out of pan by grasping parchment and place on a cooling rack
- Ice with cream cheese icing and sprinkle with quints if using.
- Slice and serve
