Healthy Brownie Carrot Pots bring together the indulgence of rich, fudgy brownies with a fresh, spring-inspired twist. These adorable little treats look like tiny potted carrots, making them perfect for Easter celebrations, garden parties, or any springtime gathering. Plus, they’re packed with wholesome ingredients, so you can enjoy a sweet treat without the guilt!

Every year at Easter, our treats always revolve around chocolate!

And that’s great because we all need some joy in our lives, right??

Well, this year, I decided to make my chocolate treats a bit more healthy, because with copious amounts of chocolate and sweets, let’s try to show a wee bit of restraint 😉

I started off by using my black bean brownie bites recipe (see photo below) for the batter and then tried to sprinkle them with a bit of Easter cuteness!!

I made these brownie carrot pots for an event about 8 years ago and thought they needed a permanent place on the blog! If you want to skip all of the “healthy” stuff and go hog wild on idulgence, then you do you! You can use any brownie mix (or even a cake mix for that matter) in the place of the black bean brownie base.

  1. Prepare the Brownie Batter – Mix together your ingredients until a smooth, thick batter forms.
  2. Bake in Small Ceramic Pots – Place muffin liners in mini oven-safe ceramic pots and fill each one with brownie batter about ¾ full. Bake until just set.
  3. Create the “Soil” Layer – Once the brownies are fully cooled, spread the tops with Nutella and then sprinkle the tops with crushed Oreo-style cookies.
  4. Make the “Carrot” Strawberries – Dip fresh strawberries into melted orange-tinted chocolate and let them set.
  5. Assemble – Place an orange-coated strawberry in the center of each brownie pot

Healthy Spring “Pots of Carrots” Brownies

If you’re looking for a cute conversation starter for you Easter table, look no further than these cute pot of goodness!!

Equipment

  • 12 small terra cotta pots ((you can find these at a garden centre or a dollar store))
  • 12 paper muffin liners

Ingredients
  

Brownies:

  • 1 190z/540mL can black beans drained and rinsed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/3 cup coconut oil melted (you can use melted butter)
  • 1/2 cup cocoa powder
  • 2 tsp vanilla
  • 1/2 cup chocolate chips
  • 1/2 cup walnuts

To Finish:

  • 1 cup Nutella
  • 1 cup orange chocolate melts melted (you can use melted white chocolate with orange food colouring)
  • 1 cup chocolate oreo crumbs (you can also pulverize whole Oreos in a food processor to make crumbs)
  • 1 cup chocolate rocks (optional)

Instructions
 

  • Preheat your oven to 350 and prepare your terra cotta pots by placing the paper liners into the terra cotta pots, pushing down until they are secure; set aside.
  • In the bowl of a food processor, add the beans and process until broken down a bit. Add melted coconut oil/butter and process again.
  • Add the sugar and process again; scrape down sides. Add eggs and vanilla and process again. Add chocolate chips and nuts and process one last time.
  • Evenly distribute the batter between the pots and bake for about 20 minutes.
  • While the pots are baking, prepare the strawberries by dipping them into the melted orange chocolate and then, with a fork, drizzle more chocolate over with a fork (to make the ‘line’ on a carrot); place on parchment paper to harden and set aside.
  • When the pots are done, let them cool for about 15 minutes and then spread some Nutella on the top of each brownie pot; next sprinkle with the crumbs, add some chocolate rocks if using around the edge and then place on strawberry on top of each pot.
  • Serve!!!

You can use anything you like as the brownie base – even a store-bought brownie mix
