- baking soda

- Greek yogurt
- eggs
- greens (spinach, kale, etc)
- onion
- red pepper
- parmigiano/romano/pecorino cheese
- fresh herbs (like cilantro, parsley, or chives—optional but fancy)

- Mix together dry ingredients
- Mix together wet ingredients and mix with dry
- Add in veggies and cheese and mix
- Place batter in a hot skillet and cook pancakes

- 2 tbsp unflavoured protein powder
- 1/2 tsp salt more to taste
- 1/2 tsp ground pepper
- 1/2 cup Greek yogurt
- 4 large eggs
- 1 cup chopped greens spinach, kale, etc
- 1 small onion finely chopped or grated
- 1/2 small red pepper thinly sliced
- 3 tbsp grate parmegiano/romano/pecorino cheese
- 1-2 tbsp fresh herbs like cilantro, parsley, or chives—optional but fancy
- Oil for cooking
Instructions
- In a medium bowl, whisk together chickpea flour, protein powder, baking soda, salt and pepper.
- In a small bowl, mix together yogurt and eggs; stir wet ingredients into dry.
- Add your sliced peppers, onion, cheese and herbs. Stir well. Let the batter rest for 5-10 minutes if you can. (Helps the chickpea flour hydrate and mellow.)
- Heat a non-stick or cast-iron pan over medium heat. Lightly grease with oil. Pour 2 tbsp of batter per pancake and spread it out slightly. Cook for 2-3 minutes per side until golden brown and crisp. Flip gently—they’re tender souls but worth the care.
