Seeded Cottage Cheese Bread

Ingredients
  

  • 2 cups cottage cheese
  • 3 medium eggs
  • 1 tbsp honey
  • 2 cups rolled oats see notes
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 2 tbsp flax seeds
  • 2 tbsp sesame seeds

Instructions
 

  • Set your oven to 350°F and grease a 9×5-inch loaf pan or an 8×8 inch cake pan.
  • In a large bowl, whisk together the cottage cheese, eggs and honey.
  • In another bowl, whisk together the oats, baking soda, baking powder and salt.
  • Add dry ingredients to the wet and stir to combine.
  • Stir the sunflower seeds, flaxseeds, sesame seeds, and pumpkin seeds into the batter until just combined.
  • Pour the batter into the greased pan and spread evenly.
  • Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

    This is an excellent recipe. Just tried it today. I used quick oats and for nuts, I used roasted walnuts chopped very finely and roasted sunflower seeds along with sesame seeds and ground flax seed. I used cottage cheese (mostly because I love cottage cheese! ) and it worked very well. I will try Greek yogurt for my next loaf. I baked it in a 5”x 9” loaf pan. It baked for 50 minutes and was nicely baked … moist and easy to slice once it was cool. It’s delicious and it slices nicely so it will work for sandwiches. I am so happy to have found this recipe and plan to make this my regular bread. Thank you so much!
