  • 1 -1 1/2 cup chopped sweet onion like Vidalia or red
  • 1 large red pepper, diced
  • 2 cloves garlic, minced
  • 1 28oz can tomatoes, undrained ('Chop' tomatoes with scissors)
  • 1 1/2 cups chicken broth you can use veggie to make it vegetarian
  • 1 cup rice (uncooked) long grain or basmati (rinsed)
  • 2 tbsp tomato paste (see tip for storing extra)
  • 1 tsp dried oregano
  • 1 tsp chili powder (you can sub in smoked paprika)
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • pinch cayenne pepper
  • 1 19oz can black beans, drained and rinsed
  • Handful chopped parsley or cilantro
  • 1 small lime, juiced (optional but super yummy)

Instructions
 

  • In a large saucepan, heat oil over medium high heat and cook onions and peppers for about 5 minutes to soften; add garlic and cook until softened.
  • Add in tomatoes, rice, stock, tomato paste and spices; bring to a boil and reduce heat, cover and simmer for 20-25 minutes.
  • Once rice is tender, stir in beans and parsley/cilantro; serve with a squeeze of lime if using.
