Savoury Mediterranean Zucchini Loaf
Ingredients
- 1 1/2 cups rolled oats
- 1 cup crumbled feta
- 1 cup red onion, chopped
- 2 cups shredded zucchini
- 1 roasted pepper, finely chopped (bottled)
- 2 tbsp sun dried tomato, chopped
- 15 black olives, chopped
- 2 tbsp 'creamy' nuts, chopped (walnuts, cashews, pine nuts)
- 2 tbsp mixed seeds (sesame, pumpkin, etc)
- 2 tbsp fresh herbs, chopped (I love basil and parsley)
- 1 1/2 tsp dried oregano (you can sub in other dried herbs)
- 1 tsp salt and pepper, each
- 3 eggs
- 50 grams butter, melted
- 2 tsp olive oil
Instructions
- Preheat oven to 350 degrees.
- Line an 8x8" cake pan with parchment and set aside.
- Put all of the ingredients into a large bowl (except for eggs, butter and oil) and stir together well.
- Add in eggs and butter and mix again until everything is combined well. Transfer the mixture into the prepared pan and press down to flatten top.
- Brush the top of the cake with the olive oil and sprinkle with a touch more salt and pepper.
- Place the baking dish into the preheated oven and bake until firm, about 35-40 minutes or until a skewer inserted comes out clean.
- Remove from oven and let cool slightly before cutting and serving.
