There are certain baked goods that instantly make you feel like you’ve got your life together. You know, the kind of recipe that screams:

“Oh this old thing? I just whipped it up between yoga class and alphabetizing my spice rack.”

Coffee cake is that girl.

But we’re not just talking any coffee cake. Nope. We’re talking The Most Decadent Peach Coffee Cake — a soft, buttery cake base, juicy pockets of peaches (fresh, frozen, or canned because we don’t judge), and a cinnamon-sugar streusel topping that will make you question why you’ve wasted so much time eating sad muffins.

It’s cozy, it’s fruity, it’s slightly over-the-top (in the best way), and yes… you can totally eat it for breakfast because it has fruit.

Why This Peach Coffee Cake Gives Me the Warm Fuzzies

I remember when I was a little girl, my mom used to make tomato passata (like every Italian mama). It was a yearly activity we would all partake in the weeks prior to going back to school.

The memories of spending the weekend cleaning the garage to prepare for days of crushing tomatoes wasn’t always an easy sell for a kid (especially when your Canadian friends spent the weekend at the park catching frogs and stuff). In hindsight, however, I wouldn’t trade the memories we made with our extended family on those busy weekends for anything!

Another thing my mom did at the end of the summer was to preserve peaches…and the memory of that activity was glorious!

It was a tedious job that my mom told us was for one person – her – so we weren’t allowed to help (still not sure about the logic behind that, but, whatevs). The thing I do remember about canning peaches, however, was patiently sitting on the stairs for my mom to bring us a plate of the first warm peaches that she skinned and sliced…almost to say she was bringing them to us to get our stamp of approval so she could start jarring all the peaches that we would use all winter long.

I’d say that was a pretty awesome trade-off.

Ingredients You’ll Need for This Peach Coffee Cake:

Don’t panic — it looks long, but half of these are pantry basics you probably already have.

For the Cake:

  • granulated sugar
  • large eggs
  • milk
  • mild oil
  • maple or vanilla extract
  • all-purpose flour
  • baking powder
  • baking soda
  • salt
  • yogurt (or sour cream)
  • chopped peaches (peeled if fresh, drained if canned, unthawed if frozen)

For the Streusel Topping:

  • brown sugar
  • all-purpose flour
  • cinnamon
  • butter

For Optional Glaze (because why stop now?):

  • powdered sugar
  • milk or cream
  • maple or vanilla extract

How to Make It

Don’t worry — this is a looks fancy, tastes fancy, but was actually easy-peasy type of bake.

Step 1: Preheat & Prep

Preheat oven to 350°F (175°C). Grease a 9×13-inch pan or a springform pan if you want drama.

Step 2: Make the Streusel

In a small bowl, mix together the brown sugar, flour, and cinnamon. Add in the melted butter until it looks like crumbly wet sand. Stick it in the fridge so it stays cold.

Step 3: Whip Up the Cake Batter

In a big mixing bowl, cream together eggs, oil, milk, yogurt, sugar until light and fluffy. Add maple/vanilla extract.

In another bowl, whisk flour, baking powder, baking soda, and salt. Add the dry mixture to the wet. Don’t overmix — just keep it casual.

Step 4: Assemble the Magic

Spread the batter evenly into your prepared pan. Top batter with your peaches gently like they’re delicate little gems (because they are). Sprinkle that glorious streusel topping all over the surface like you’re decorating a sandcastle.

Step 5: Bake

Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean (just avoid stabbing a peach chunk — those stay gooey).

Step 6: Optional Glaze (Do It)

Mix powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake in random zig-zags and pretend you’re a Food Network star.

Equipment

  • 1 electric mixer
  • 2 stainless steel bowls
  • 1 set measuring spoons
  • 1 set measuring cups
  • 1 9" x 13" baking pan
  • Parchment paper

Ingredients
  

Cake Batter

  • 2 large eggs
  • 1 cup milk
  • 1/2 cup canola oil
  • 1 tsp maple extract (or sub in vanilla)
  • 1/2 cup yogurt
  • 3 cups all purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda

Peach Topping

  • 4-5 large peaches, sliced
  • 3 tbsp butter, melted
  • 11/4 cup brown sugar, lightly packed
  • 1/2 tbsp ground cinnamon
  • 4 tbsp all purpose flour

Icing (optional)

  • 1 tbsp butter, room temperature
  • 1 tsp maple extract (or sub in vanilla)
  • 3/4 cup icing sugar
  • 3 tsp heavy cream

Instructions
 

  • Preheat oven to 350°F. Prepare 9 x 13-inch pan with cooking spray. 
  • In the bowl of an electric mixer on medium speed, beat eggs for 1 minute, then add oil, extract, milk and yogurt and beat for two minutes. 
  • In a separate bowl, mix flour baking soda, baking powder, salt and sugar; add the dry mixture to the wet; mix until well incorporated (do not over mix). Pour the batter into the prepared pan and place all the peaches over the batter.
  • In separate bowl, mix melted butter, brown sugar, cinnamon and flour; spread/crumble the mixture over the peaches/batter.
  • In a small bowl, mix together the icing ingredients (if using) in a small bowl until smooth. 
  • Bake, checking with a long pick or skewer poked into the center comes out clean after about 50-60 minutes. Let cake cook and then drizzle with icing (if using)

This cake can be sliced and frozen!

    Lovely post Suzie, I too have the same memories, tomato weekend & driving to Niagara for peaches! We canned them too. So much so that I now drive to Niagara every year to see the same guy ( Ray) my father would go to. Love opening a jar in the winter over ice cream, yogurt or granola.     Hello,
    Please clarify the baking time as the blog entry says 40-45 minutes which seems reasonable but the ‘jump to recipe’ section says 60-70 minutes which seems off to my baker’s mind.

      Hey Jodi!!!
      I’m so sorry I missed this!! I remade it last week just to make sure (I think I made it again and realized 45 min isn’t long enough. I changed it to 50-60 minutes which works in my oven that is calibrated. But if your oven is different, it may take shorter or longer. Just make sure the middle is firm.
