Maria's Italian Ricotta Cookies

Ingredients

  • 1 cup butter room temperature
  • 2 cups sugar
  • 3 eggs
  • 1 carton 15 oz ricotta cheese
  • 2 tsp vanilla
  • 4 cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda

Instructions

  • Preheat the oven to 350 degrees.
  • In a bowl, cream butter and sugar until fluffy.
  • Add eggs, one at a time, beating well after each addition. Beat in ricotta and vanilla.
  • In a separate bowl, combine flour, salt and baking soda; gradually add to the creamed mixture.
  • Drop by rounded teaspoons 2 inches apart onto a greased (or parchment or Silpat lined) baking sheet.
  • Bake at 350 for 10-12 minutes

Notes

This makes a lot of cookies!!
You can bake a few off at a time and freeze the rest (as mentions above). They freeze beautifully and are best eaten hot out of the oven!!!
