Lazy Daisy Oatmeal Cake

Ingredients

Cake:

  • 1 cup oats
  • 1/2 cup butter, cut into smaller squares
  • 1 1/4 cup boiling water
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp dried ginger
  • 1/2 tsp allspice
  • 1/2 tsp salt

Frosting:

  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 3 tbsp milk
  • 3/4 cup shredded coconut
  • 1/3 cup chopped nuts (I used walnuts)

Instructions

  • Preheat oven to 350 and prepare a 9 x 13" pan by either spraying it with cooking spray or lining it with parchment paper.
  • In a bowl, combine the oats, butter and boiling water. Stir to combine and set aside for 10-15 minutes while you prep the rest of the ingredients.
  • In a medium bowl, place eggs and both sugars (1 cup granulated and 1 cup brown) and beat until combined. Add in vanilla and beat again.
  • In another bowl, sift together dry ingredients (flour, baking soda, cinnamon and spices); add it to the egg/sugar mixture along with the soaked oatmeal mixture and mix until combined.
  • Pour batter into the prepared pan and bake for 30-40 minutes (or until golden and the middle springs back when pressed gently).
  • When the cake is baked, remove from oven (and set oven to broil) and let cook while you prepare the frosting.
  • In a bowl, combine all of the frosting ingredients and mix until combined; pour over the cake and place cake under the broiler (watching to make sure it doesn't burn)
  • Serve warm or at room temperature and it can also be frozen!
