I don’t know about all of you, but after the holidays are over, I just want to clean up (especially since I’ve spent so much time planning meals and shopping for gifts that I have completely ignored my house…and now it’s an absolute dive!).

So I just want to clean.  Sounds weird, right?

And, with cleaning comes organizing…

Blame it on the time of year.  Am I the only one who wants to fill in my day timer for the next year and start planning all of the things that were SUPPOSED to happen in December but I said, “oh, we’ll do that in January when it’s less busy”?  So much to think about …. I feel so discombobulated!

But, wait!!!  The holidays aren’t over yet!   So, I am going to baaaaaaaccckkkk it uuuupppp!

I can still be in holiday mode, right?  Clean up and organizing can wait until next week!

So let’s talk about New Years!  I wrote a post last year about hosting a stress free NYE party and now I want to talk about easing into the new year by having a stress free New Years Day – that last of the lazy days before we begin our next 365 day journey!

Whether it’s just your partner and kids, or you have a houseful of people, here are some tips to getting bellies filled without the stress of kitchen madness:

Tip 1:  A Hot Out of the Oven Treat!

Sometimes you need a warm treat that is bakery worthy but comes out of your own oven.  Think it’s not possible??

Well if you make a batch of these Ricotta Cookies and freeze the dough balls, when you perk your coffee in the morning, just pop a few of these in the oven and serve them with some good quality jam! Like hot-out-of-the-oven scones…but better!!

Tip 2:  A Make Ahead Filling Meal!!

The ultimate make-ahead breakfast (for me, at least) would be a breakfast strata!! Think savoury bread pudding as a belly-filling morning meal! I developed this recipe for this savoury brie and spinach strata and it is FANTASTIC (and can be frozen ahead so all you have to do is pop it in the oven!!). There is a recipe in my cookbook that is my go-to!! You can order the book here!!

Tip 3:  Serve a Healthy (but crazy easy) Option!

Maybe all you need is some good old fashioned carbs…in the form of pancakes! But, these ones are healthy…and easy!! Thrown together in the blender in like 2 minutes, they make the best morning grub…especially when you have a crowd.  Leave the batter by the strove and everyone can make their own!! You can find the recipe for these healthy panc kes (gluten free/dairy free) right here!). But if you want just regular ol’ pancakes, here is my no-fail recipe!! Tip 4: Make a Mexican Morning!!

If you feel like you might not have the energy on New Years morning to make a proper breakfast, make these burritos ahead and just heat them when you wake up!

Tip 5: Granola is Always a Good Idea!

Sometimes, making a batch of my Life Saving Granola is all you need to get the New Year off to a good start (plus, adding this to your New Years buffet breakfast table – with some fresh berries and yogurt – is a smart move!!)

Tip 6: Have a Good French Toast Recipe Under Your Belt!

But, I also think New Years morning is a time to splurge a little.  Making a batch of French Toast is always a treat to me. Doused in pure Canadiana maple syrup and eaten hot off the griddle, it’s like having cake for breakfast!

My favourite way to make French toast, especially right after Christmas, is to use panettone! It’s a perfect vehicle to absorb all of that eggy goodness!

I make mine the way most people make french toast but I like to coat the french toast in crush cereal for added crunch!! Soooo yummy!

Why Panettone Makes the Best French Toast

French toast is french toast is french toast...unless it's made with panettone!  The ultimate bread for french toast because it's got lots of nooks and crannies to absorb goodness and it drys out quickly making it a good "sponge" for the egg base!!  Crusted or not, it's a fabulous way to start off your new year!!

Ingredients
  

  • 1/2 Italian panettone (you can also use stale croissants) *you should get about 4 large slices
  • 4 eggs
  • 1/4 cup milk
  • 4 cups corn flakes cereal (about 2 cups crushed)
  • 1/4 cup sugar
  • 2 tsp cinnamon
  • 2 tbsp butter, divided
  • maple syrup and icing sugar/powdered sugar for serving

Instructions
 

  • Place your panettone slices on a baking sheet and leave on the counter to dry out a bit while you prep the rest of your ingredients
  • In a shallow bowl, beat eggs with milk and set aside.
  • Put cereal in a ziplock bag and crush to a fine "crumb" (but not into a powder) and then place it in another shallow bowl.
  • Heat 1 tbsp of butter in a skillet over medium heat; begin making the french toast by dipping the bread slices in the egg mixture and then coating it in cereal.
  • When the skillet is hot, place about 4 pieces at a time in the hot butter and crisp one side; then flip over and crisp other side (should be brown).
  • As you finish crisping the pieces, place back on the cookie sheet and sprinkle with a bit of the granulated sugar and dust with cinnamon; place in a warm oven until ready to serve.
  • Continue until all pieces are done and then serve with syrup and powdered sugar.
