Fresh Plum and Almond Squares

Hey, summer is only so long…why not make the most of what we get from it?  Fruit.
Yes, you can make these with non-local plums in the middle of winter.
No, they won’t be as good
Sorry…So, grab a container of plums (black prune plums are best but any will do) and let’s make some squares…
Ingredients:Crust:
3/4 c butter
3/4 c brown sugar
1/2 c ground almonds
1 1/2 c flour
4 c sliced plums (about 7-8 plums)

Topping:
1/4 butter, softened
1/4 c sugar
1/4 c flour
1/2 c sliced almonds

Batter:
3 eggs
3/4 c sugar
1/2 c flour
1/2 c ground almonds
1 tsp baking powder

1.  Preheat oven to 375; line a 9×13″ pan with parchment.
2.  In a mixing bowl, beat together butter and sugar until creamy.

3.  Stir in almonds and then add flour; mix until crumbly.
4.  Pat into the baking dish and bake for 12 minutes (it should start to get brown but not too much because it will continue baking)

5.  Dump plums onto crust and spread out evenly.

6.  Meanwhile, make the batter by beating eggs (in the same mixing bowl you used before);  add sugar and beat until light – about 5 minutes.
7.  In a small bowl, combine flour ground almonds and baking powder; add to egg mixture and stir again

8.  Pour egg mixture evenly over plums.

9.  In the same small bowl you used before, mix the topping (butter, flour, sugar and sliced almonds) and sprinkle mixture over batter.

10.  Bake for about 40 minutes or until golden.

11.  Find some ice cream, grab a plate and dig right in!
