What to do With an Abundance of Zucchini

If you have ever planted zucchini in your garden, you know too well that when the zucchini are ready, you must also be ready to deal with the massive onslaught of summer squash!
Zucchini bread, zucchini fritters, cream of zucchini soup, grilled zucchini, zucchini involtini…yada, yada, yada…
As you can imagine, even though it is a mighty righteous veggie (it has only 36 calories per cup, loads of antioxidants, tons of fibre, vitamin A,C and folate as well as aiding in the prevention of prostate cancer, heart disease, inflammation and cholesterol), eating it every night can become pretty tiresome!
But why not save some for another time…say when tomatoes are in season and you are tired of those?  I picked 3 huge zucchini that somehow managed to escape my eye when I was in the garden and they grew to an enormous size.  Unfortunately, when they get big, they become spongy and “seedy” in the middle which makes them a bad candidate for the grill.  But, why not remove the unwanted parts and grate them for another time?

                     Remove the seeds and put them into your green bin.

Put the good parts through the grater attachment of your food processor (take out that baby for big jobs like this!)  This HUGE bowl of grated zucchini is what I got from 3 large zucchini.  It took 5 minutes to grate and 1 minute to rinse the bowl and grater attachment…

Measure it out in 2 cup measures (which is always the amount called for in a zucchini bread recipe) and put it into freezer for another time.  When the urge strikes, maybe make a few loaves, or throw some together with some egg, breadcrumbs, potatoes and onions for some fritters or how about throwing a bag into your next meatloaf mixture?  All you have to do is take it out of the freezer and break up the mixture with your hands (but keep it in the bag in the bag) and let it defrost while you get the rest of your ingredients ready…it’s okay if it’s still a bit frozen.
This process (which took about 10-12 minutes) made enough to bake 8 recipes of zucchini bread…brilliant, no??
