Is it just me or does everyone want to be Irish on St. Paddy’s day?
I mean, I’m Italian…there’s no pretending.
I think I have one freckle…like behind my knee and there ain’t one strand of red hair anywhere.
I know, I know…making such a bold statement (because, actually, I have a friend who is Sicilian and he has the reddest hair of anyone I know and he’s like, COVERED in freckles…who knew?).
But, I just want to fit in on St. Paddy’s Day. I feel like such an impostor. I can’t even chug half a beer without forgetting what day it is.
But, there is ONE thing I can do.
I make a mean Irish Soda bread.
That’s counts, no?
It’s the best thing since sliced bread.
Well, it actually is sliced bread…but waaay easier.
No, yeast, no rising, no waiting.
I mean, come on. That’s epic.
You can find the recipe here and it really is one of the easiest things around.
But, I was thinking, why not make the bread into buns? And why not serve it with some green (matcha) butter?
I got the idea from my friend Raelene who owns a tea company (Tea and All It’s Splendour) and brought me over these amazing matcha shortbread cookies a few years back – and that got me thinking about what else I can turn green….and I came up with butter!!!!
And because bread and butter go together like, well, bread and butter, it’s seemed logical.
So, whip up some of these babies this weekend. Red hair or not, freckled or not, those leprechauns are gonna be searching you out to get their teeny little hands on these pillows o goodness.
And if you’re lucky enough, they might bring you one of those pots at the end of the rainbow.
Or at least some really good beer.
- 4 cups flour
- 6 tablespoons sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 4 tablespoons cold salted butter, cut into small cubes
- 1 1/2 cups buttermilk (if you don’t have buttermilk, put 1 tablespoon vinegar in your measuring cup, then add enough milk to reach 1 1/2 cups, then let sit for 5 minutes)
- 1 orange, juiced and zested (1/2 cup freshly squeezed juice )
- 1 egg
- 1 cup dried cranberries or cherries
- 4 tbsp butter
- 1 tsp matcha powder
- Preheat oven to 375 F.
- In the bowl of a stand mixer, whisk together the flour, sugar, baking soda, and salt.
- Add the butter to the bowl and mix on low until butter is fully incorporated.
- Whisk together the buttermilk, orange juice, egg, and orange zest. Add slowly to the dry ingredients while the mixer is running on low. Mix until just fully incorporated. Dough will be quite wet.
- Add the cranberries and mix on low until fully incorporated.
- Turn dough out onto a well-floured, large cutting board. Knead with well-floured hands for about 1 minute.
- Divide dough into 16 equal parts.
- With floured hands, form nice round balls of dough. Place on baking sheet lined with parchment paper or a silicone baking mat. Dough balls should be arranged into four rows of four, with dough balls lightly touching one another.
- Bake for 20-25 minutes, until buns are lightly browned and a cake tester comes out clean.
- Enjoy warm or at room temperature with matcha butter!
