Pizza Roll Ups

If you asked people what their favourite food is, I would bet the most popular answer would be pizza.

And, how can you really argue with that?  I mean, you can have whatever toppings you like, whatever crust you like, thick or thin, crispy or chewy, healthy or decadent, savoury or sweet…honestly, I can’t think of a more perfect food.

But sometimes, you just want pizza.

Like now.

Like, you can even wait for the delivery guy to get here.

So, let me help you out.

Give this a try.  Other than a ball of dough, which I often grab at the grocery store because it is so convenient to have at home (or you can just make this), the rest of this stuff you can find in your fridge or pantry.


Pizza dough (store bought or homemade)

Pizza sauce (store bought or try #4 in this post)

Toppings of your choice (what I used here is leftover sliced steak, roasted tomatoes, sliced olives and  provolone cheese.




1.  Preheat the oven to 400 degrees and generously oil a muffin tin.

2.  On a floured surface, roll out the dough with a rolling pin (try to get it into a rectangular/oval shape).



3.  On 2/3rds, leaving a border to make sure the filling doesn’t ooze out, start with sauce (or something that is a binder – like tomato sauce, bechamel sauce, ricotta – it should be something with a bit of moisture), then some veggies (I used chopped green olives and roasted tomatoes but you can use diced peppers, onion, mushrooms, etc), and then some meat if you like (try chopped bacon or sliced ham).



4.  Finally, add grated cheese (provolone, mozzarella, gruyere, fontina, goat cheese, feta) as the last step and this will act as a binder to keep everything together.

5.  Roll from the left to the right, finishing where the 1/3 of the dough is not covered (this ensures the filling stays in!).

6.  Cut the log in half, then cut each half in half, then cut each section into 3rds (it will be 12 equal pieces).



7.  Place each section into a muffin tin (so the roll shows, as above).  If you like, you can top each roll with a slice of roasted tomato, some extra cheese or even brush it with egg wash to give it a golden colour (wish I would have done that!!)



8.  Bake for 25 minutes or until it starts to brown.  Remove from the oven and pop out of the tin.



Enjoy these with a big salad or hearty soup to round out a meal or place them in a big bread basket at your next bbq….talk about a conversation starter!

Actually, who’s kidding who…there will be no conversation…they will be too busy chewing!
