Company’s Coming Cranberry Cake

So, a friend called you…

“Are you home? I’m around the corner…can I stop by for a coffee?”
Is your heart racing?  Did you suddenly break out in a sweat because you realized the only thing you have to serve with coffee is some Saltines??
Relax….breathe…This is one of the fastest cakes to put together and has minimal cleanup.  The only time is the cooking time…and that just means it makes the house smell fantastic.Don’t wait for the phone call…try it today.  It may even cost less that a can of Lysol!
Ingredients:
Cake:
1 c flour
1 c sugar
pinch salt
2 c cranberries (fresh or frozen)
1/2 c sliced almonds
2 eggs
1/2 c melted butter
1 tsp almond extract
Topping:
1/4 c flour
1/3 c brown sugar
2 tbsp butter, softened
1/2 tsp cinnamon

1.  Preheat oven to 350° and get your ingredients together.

2.  Spray an 8×8″ baking pan with cooking spray (if you would like to try this in a 9×13″ pan, just double the ingredients).

3.  In a large bowl, mix flour sugar and salt.

4.  Add cranberries and nuts and mix again.

 

5.  In a small bowl (or measuring cup – not because you have to measure but because you are too lazy to get another bowl), mix eggs, almond extract and melted butter.

 

6.  Add to cranberry/flour mixture and mix.

7.  Spread cake mixture in the prepared baking dish and, in the same bowl that you mixed the cake ingredients in, toss the flour, brown sugar and cinnamon; add butter and mix with your hands until it is incorporated.

8.  Crumble topping on top of cake and bake for 40 minutes…until the middle springs back and the sides begin to get brown…

…like this!  The topping will get crusty and the cranberries will melt.  The sweet from the cake will mix with the tart cranberries…it’s pretty awesome.  And don’t forget the ice cream…especially when it’s warm!  I served mine with homemade brown butter ice cream (honestly, the best ice cream on the planet!)
