Double Chocolate Hazelnut Biscotti

Wow…Christmas has totally snuck up on me this year!!
It’s hard enough getting it all together, but even harder when you remember that you want to document it all on the web.  I’m sorry that I haven’t been that good about posting lately…it’s been a bit hectic!
So, I thought I would do a power baking session this past weekend, but the procrastination gods thought they would play a funny trick and throw a major ice storm and power outage my way…nice, huh??
Lucky for me, we have a generator at the farm that keeps the house warm and runs the septic system (so we can flush our toilets, thank goodness!).  We also hooked it up to necessities like one oven (but no cooktop) and our refrigerator…I guess I am luckier than many out there who slept with many layers last night.
So, thank you, procrastination gods, for being kind to me…I promise I will do better before Christmas gets here.I have two days…I know…sleep is over rated anyways.
Ingredients:
6 tbsp butter, softened
1 c sugar
2 eggs
2 c flour
1/2 c cocoa powder
1 tsp baking soda
pinch salt
1 c hazelnuts, roughly chopped
1/2 c chocolate chips

1.  Preheat oven to 350 and get your baking pan ready with a sheet of parchment.  Beat butter until fluffy; then add sugar and beat again; then add eggs and beat again.

2.  In a separate bowl, whisk together flour, cocoa powder, baking soda and salt.  Mix into butter mixture; add nuts and chocolate chips and mix again.

3.  Form into 2 logs like this (long and rectangular); bake for about 25 minutes or until it springs back in the centre.

4.  Cut with a serrated knife into 1 inch pieces and place back on the tray; put back into the oven (now with lowered heat to 300) and bake for about 8 minutes – 4 minutes on one side and then turn them over and do the other side.

5.  Now, pour yourself a cup of coffee and enjoy!!
